Hello forum, as someone who is somewhat new to the Hindustani Classical music genre, what are some of your favorite pieces someone new like me would enjoy?

Well, it primarily depends on what exactly you'd like to hear and what time of day you'd like to hear it.
If you'd like to listen to a plucked string instrument, try sarod or sitar.
If you'd like to listen to a bowed string instrument, try the sarangi or violin.
If you'd like to listen to a human voice, try a vocalist.
Raagas are expressions of feeling after all, so here are some pieces that summarize that feeling relatively quickly:
Raaga Bhairavi - Early Morning - Sitar
Raaga Desh - 9PM to 12 AM - Flute
Raaga Hamsdhwani - 6 PM to 9 PM - Vocalist
Here are some longer pieces, these go more in-depth and I personally like listening to them while I work:
